Spring is here

It’s SPRING! Outdoor markets in the Seattle area are now starting to pop up.  This past Sunday I ventured into Ballard to visit the local farmers and vendors at their Farmer’s Market.  I picke

d up a bag of Farro (emmer wheat) and ponder what to do with it.  It came to me a couple days later as I was rummaging in the kitchen to see what was on hand. Ended up with some flavors from the Mediterranean.  So a delicious Mediterranean Farro Salad was dish.

Cold Morning, Warm Breakfast

Merry Christmas all!  I got up this morning and wanted a warm and filling breakfast for my family.  Some protein, greens and spice to wake up with.  I made a delicious tofu and spinach scramble.  Tofu is high in protein.  The spinach is high in vitamins and minerals.  Add some whole grain toast and you have a well balanced meal to begin any day with.  Enjoy!

Tofu Teriyaki with Brown Rice

I wanted to make an easy dinner that would be flavorful and healthy.  Baked Teriyaki Tofu and brown rice.  Both cook in the oven at the same temp, for the same amount of time.  Complete the meal with some steamed vegetables. I am always amazed at how well the brown rice turns out.  The method I use came from Susan Powter’s website, but I recently saw it on Alton Brown’s “Good Eats” show.

Great to make a batch to keep in the fridge.

Oat and Banana Smoothie

Woke up this morning and wanted something sweet to start the day with.  I didn’t have time to cook oatmeal, but I did have time to whip up a smoothie.  The Oat and Banana Smoothie sounded like a good option, and it was!  Bananas are a great source of potassium and a good source for vitamins B6 and C.  Oatmeal is high in dietary fiber and the soy milk is a good source of protein.
