Tofu Scramble

  • 1 lb of firm tofu, drained, but not pressed
  • 1/2 white onion, cut into thin half moon slices
  • 1 cup of chopped spinach
  • 1 tsp turmeric
  • salt and pepper to taste
  • 1 tbsp olive oil
  1. In a large skillet, heat olive oil over a medium heat.
  2. Add onion and saute until softened.
  3. Stir in spinach and cook until bright green.
  4. Crumble the tofu into the pan.  This texture looks like scrambled eggs. Cook to warm thoroughly.
  5. Sprinkle the turmeric even over the tofu.  Stir to color the tofu yellow.
  6. Season with salt and pepper.
