Baked Brown Rice

I read about this method for cooking brown rice on Susan Powter’s website.

  • 1 1/2 cups brown rice, washed
  • 2 1/2 cups boiling water
  • 2 Tablespoons Olive Oil
  • pinch of salt
  1. Preheat oven to 375º
  2. Combine rice, boiling water, olive oil and salt in an oven safe casserole dish.
  3. Cover dish tightly with foil.
  4. Bake for one hour
